I’ve always had a soft spot for potatoes in just about any form—mashed, baked, fried, roasted, scalloped… if it’s a potato, I’m probably going to love it. There’s just something so comforting and homey about a good potato dish, and this Loaded Potato Casserole is one of my favorites.

It’s creamy, cheesy, full of flavor, and it truly feels like comfort food wrapped in a casserole dish.

This is one of those side dishes that works for just about any occasion—holiday dinners, Sunday family meals, potlucks, and big family get-togethers.

It’s always a crowd favorite and disappears so fast every time I make it. I used to make a version of this in the crockpot for family gatherings, and it was always such an easy, make-ahead way to keep everyone happily fed.

Now, this baked version has become just as loved and just as reliable whenever I need a cozy, hearty side dish.

What is Loaded Potato Casserole?

Loaded Potato Casserole is a cozy, comforting potato dish that takes all the best parts of a loaded baked potato—creamy potatoes, melted cheese, crispy bacon, sour cream, and green onions—and bakes them together into one warm, cheesy casserole.

Instead of baking individual potatoes, everything is mixed together, spread in a baking dish, and baked until bubbly and golden.

It’s rich, flavorful, super family-friendly, and makes an amazing side dish for holidays, potlucks, or everyday dinners.

Ingredients

  • Russet potatoes, peeled and cut into chunks
  • Butter
  • Top the Tater Sour cream
  • Shredded cheddar cheese
  • Cooked bacon, crumbled
  • Green onions or chives, chopped
  • Salt and pepper
  • Garlic powder
  • Onion powder

How to make Loaded Potato Casserole

Preheat your oven to 375°F.

Lightly grease an 8×8 baking dish.

Place the potatoes in a large pot and cover with cold water.

Add a small pinch of salt.

Bring to a boil and cook 10–12 minutes, or until fork-tender.

Add the potatoes to a large bowl along with the butter and Top the Tater sour cream.

Mash until creamy, leaving a few small chunks for texture.

Season with garlic powder, onion powder, salt, and pepper.

Fold in ¾ cup cheddar cheese, most of the bacon, and most of the green onions.

Spread the potato mixture evenly into your greased 8×8 pan.

Top with the remaining ¼ cup cheddar, plus the reserved bacon and green onions.
