This recipe came together after reading through several no-bake cheesecake recipes and then improvising with the ingredients I already had on hand in my kitchen.
Everyone that tried it absolutely loved it and believe me, they would tell me if they didn’t like it.
I almost didn’t share this recipe because a couple of the photos looked oddly fake—even though they’re not—but the cheesecake turned out too delicious not to post.

What is No-Bake Strawberry Cheesecake?
No-bake Strawberry Cheesecake is a creamy, chilled dessert made without using an oven.
It combines a sweet graham cracker or cookie crust with a smooth, tangy cheesecake filling and a strawberry topping.
The filling typically sets in the refrigerator instead of being baked, making it an easy, cool treat—especially popular during spring and summer.
Ingredients
Cheesecake
- Strawberry flavored Jell-o
- Boiling water
- Cream cheese, softened
- Granulated sugar
- Vanilla extract
- Evaporated milk, cold
- Fresh strawberries for garnish (optional)

Graham Cracker Crust
- Graham crackers, finely ground
- Butter, melted
- Granulated sugar

How to make No-bake Strawberry Cheesecake
In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until evenly moistened.

Press firmly into the bottom of a 9-inch springform pan.
Chill in the refrigerator while you prepare the filling.

Dissolve the strawberry gelatin in boiling water, then chill in the fridge for about 20 minutes until it’s thick but not fully set.

Beat cream cheese, sugar, and vanilla extract together in a bowl until smooth.

In a separate bowl, beat the evaporated milk with an electric mixer until it’s thick and fluffy.

Slowly add the strawberry gelatin while mixing.

Then gently fold in the cream cheese mixture to make the cheesecake filling.

Pour cheesecake filling into crust.

Refrigerate until cake is set, at least 4 hours.

Once fully set, release the cheesecake from the springform pan.
Top with whole fresh berries.

Slice and enjoy every creamy, fruity bite!
