How to make Cranberry Almond Granola
Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large bowl, combine the rolled oats, sliced almonds, cinnamon, and salt.
In a smaller bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.
Pour the wet ingredients over the oat mixture, stirring well to make sure everything is evenly coated.
Spread the granola mixture evenly on the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through to ensure even browning. Keep an eye on it towards the end to prevent burning.
Remove the granola from the oven and let it cool completely on the baking sheet. Once cooled, stir in the dried cranberries.
