I found this recipe on the Life Made Delicious website but I wasn’t really thinking about it until I was making it but this is a large recipe.
I ended up making it in halves because it wouldn’t all fit in one pan.
It’s a great amount to make if you’re making it for classroom parties or sharing with family and friends.
If you don’t need quite that much, just cut the recipe in half—it’ll still have all the same sweet goodness!

Lucky Rainbow Chex Mix is a fun, festive, and colorful snack mix that’s perfect for St. Patrick’s Day!
It’s a sweet treat made with Chex cereal, Lucky Charms cereal, white chocolate chips, and rainbow-colored sprinkles.

Ingredients
- Lucky Charms cereal
- Rice Chex cereal
- White vanilla baking chips
- Multicolored candy sprinkles

How to make Lucky Rainbow Chex Mix
Line a large baking sheet with parchment paper.

Melt white chocolate in pan on low heat.

Add Lucky Charms cereal and Rice Chex Cereal to a large bowl and mix together.

Pour over cereal mixture into the pan with the melted white chocolate; stir to evenly coat.

Spread mixture in single layer on the prepared baking sheet.
Immediately sprinkle with candy sprinkles.
Let stand until set, about 20 minutes.

Enjoy!
Store in an airtight container at room temperature for up to a week, if it lasts the long!
