We have a local BBQ restaurant that serves the most amazing Pulled Pork Baked Potatoes so I figured how hard could it be to recreate them at home.
This is such an easy supper, just toss a couple potatoes on the grill or in the oven, add the toppings and in no time you have a satisfying little dinner.

How to make a Pulled Pork Baked Potato
Preheat your oven to 400°F (200°C). Wash and dry the potatoes, then pierce each potato a few times with a fork. Rub them with olive oil and sprinkle with salt.
Place the potatoes on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
While the potatoes are baking, warm the pulled pork in a skillet over medium heat. Keep warm on low heat.
Once the potatoes are done, let them cool slightly before cutting them open lengthwise. Fluff the insides with a fork, and if desired, add a little butter for extra creaminess.
Add a dollop of sour cream.
Top each potato with a generous portion of the BBQ pulled pork. Sprinkle shredded cheddar cheese over the pork and allow it to melt.
Add a sprinkle of chopped green onions, and any other desired toppings like coleslaw, bacon bits, or jalapeños.
