I had some strawberries left over after making Bisquick Strawberry Shortcake so I was looking for something simple and easy to make that wouldn’t heat up the house since summer has fully arrived here.
I found this recipe for Skillet Strawberry Cobbler in the book Strawberry Love: 45 Sweet and Savory Recipes for Shortcakes, Hand Pies, Salads, Salsas, and More.
This recipe is so easy to make and doesn’t require a lot of ingredients and to keep the house cool I decided to make it on my Traeger smoker instead of the oven. I would think you could do the same thing on a charcoal grill too and it would taste amazing but I haven’t tested that out yet.
I can’t wait to try this out using my favorite fruit, blueberries or just about any berry would be fun to experiment with too.
Plus, I just received a care package with fresh mangoes in it from my awesome sister in law in Florida so now I need to work on making a couple of recipes using mangoes, maybe a simple little dump cake.
This simple summer dessert combines the freshness of strawberries with a buttery, golden crust, creating a perfect treat for any occasion. Whether you’re hosting a summer barbecue, enjoying a family picnic, or simply craving something sweet, this cobbler is sure to impress.
So, grab your skillet and some fresh strawberries, and get ready to enjoy a slice of heaven!
What is Skillet Strawberry Cobbler?
Skillet strawberry cobbler is a dessert made by baking a mixture of fresh strawberries and a sweet, biscuit-like topping in a skillet.
The topping, which can be a batter or dough, is spread over the strawberries and baked until golden and crisp. The result is a warm, comforting dessert with a juicy fruit base and a slightly crunchy, sweet crust.
It is often served with a scoop of vanilla ice cream or a dollop of whipped cream.
Ingredients
- Butter
- Self-rising flour
- Granulated or firmly packed light brown sugar
- Whole milk
- Fresh or frozen strawberries
How to make Skillet Strawberry Cobbler
Preheat the oven to 375°F (190°C). Place the butter in a 10-inch cast-iron skillet and set the skillet in the oven so the butter melts.
Whisk the flour and sugar together in a small bowl until thoroughly combined, at least 30 seconds.
Whisk in the milk.
Remove the hot skillet from the oven and pour the batter onto the hot butter.
Sprinkle the strawberries over the top of the batter.
Bake the cobbler for 40 to 50 minutes, until the batter has risen around the fruit, the top is light brown, the edges are darker brown, and a toothpick inserted in the center comes out clean (avoiding a strawberry).
Serve warm. The cobbler can be made ahead, refrigerated, and reheated before serving.
