Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Ocean Spray® Craisins® Original Dried Cranberries
  • 1/2 cup chopped pecans
  • 2/3 cups buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F. Grease and flour with Baker’s Joy Baking Spray a 9×5-inch loaf pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Stir in the chopped cranberries and pecans.
  • In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; the batter will be lumpy.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake in the preheated oven for about 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for about 10 minutes.
  • Then remove it from the pan and transfer it to a wire rack to cool completely.
