Preheat your oven to 350°F. Grease and flour with Baker’s Joy Baking Spray a 9×5-inch loaf pan.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Stir in the chopped cranberries and pecans.
In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; the batter will be lumpy.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake in the preheated oven for about 60-65 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes.
Then remove it from the pan and transfer it to a wire rack to cool completely.
