Preheat your oven to 425°F and line a baking sheet with parchment paper or lightly spray it with cooking spray.
This helps prevent the potatoes from sticking and ensures they crisp up nicely.
Scrub and chop your potatoes into ½-inch chunks.
Try to keep the pieces close in size so they roast evenly and get that golden, crispy exterior.
In a small bowl, combine olive oil with the seasonings — salt, pepper, garlic powder, and onion powder.
Stir to blend everything together.
Add the chopped potatoes to a large mixing bowl, then pour the seasoned oil mixture over the top.
Toss well until all the potatoes are evenly coated.
Spread the potatoes in a single layer on your prepared baking sheet.
Bake for 35–40 minutes;
