Instructions
Place diced potatoes in a pot of salted water and bring to a boil.
Cook for 5-7 minutes, or until just tender.
Drain and set aside.
Heat butter in a large skillet over medium heat.
Add the onion and red bell pepper. Sauté for 4-5 minutes, until softened.
Stir in the diced ham. Cook for 2 minutes, letting the ham lightly brown.
Add the boiled potatoes to the skillet. Sprinkle with Seasoned Salt, salt, and pepper.
Increase the heat to medium-high and cook for 8-10 minutes, stirring occasionally, until the potatoes are golden and crispy.
Serve hot as is, or top with a fried or poached egg for extra richness.
