- 1 3/4 cup all-purpose flour
- 1 1/4 cup granulated sugar
- 3/4 cups cornmeal
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1/2 cup vegetable oil
- 2 eggs
- 1 cup whole milk
Preheat the oven to 375° F.
In a mixing bowl, combine flour, cornmeal, salt, baking powder, and sugar.
In a separate bowl, quickly whisk together milk, eggs, and oil.
Gradually add this liquid mixture to the bowl of dry ingredients, stirring gradually until just combined. Don’t overmix – you want to keep the ingredients from getting tough!
