Preheat the oven to 350°. Add the brown sugar and granulated sugar to the bowl of a stand mixer.
In a small saucepan, melt butter and shortening over low heat and then pour over the sugars. Mix on low until well combined.
Add in the eggs one at a time followed by the vanilla extract.
Add in the baking soda and cinnamon and mix well.
Add in the flour and mix until combined.
Mix in the chopped walnuts.
Divide the dough in half and place on parchment paper. Shape each half into a log about about 2 inches tall and 3 inches wide.
Place dough in the refrigerator for at least 4 hours to chill. After the dough has chilled, remove the parchment paper and slice the cookies 1/8 to 1/4 inch thick. Place on a baking sheet and bake at 350° degrees for 10 – 12 minutes.
