Ingredients
  

  • 4 large russet potatoes
  • 4 tablespoons olive oil
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons garlic powder
  • 1 cup shredded cheddar cheese
  • 1/2 cup butter melted
  • 6 slices bacon cooked and crumbled
  • Sour cream and green onions for topping

Instructions
 

  • Preheat your oven to 400°F.
  • Scrub the potatoes clean and pierce them with a fork several times. Place them on a baking sheet.
  • Bake the potatoes in the preheated oven for about 45-60 minutes, or until they are fork-tender.
  • Allow the potatoes to cool for a bit, then cut them in half lengthwise. Scoop out the inside, leaving a thin layer of potato on the skin.
  • Brush the potato skins with olive oil, melted butter, and season with garlic powder, grated parmesan, salt and pepper.
  • Place the potato skins back on the baking sheet, skin side down, and bake for an additional 10 minutes or until the edges are golden and crispy.
  • Remove the potato skins from the oven, sprinkle shredded cheddar cheese and crumbled bacon on top.
  • Return the potato skins to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let them cool slightly.
  • Top with sour cream and green onions.
  • Serve your baked potato skins as a tasty appetizer or snack. Enjoy!
