Instructions
Preheat your oven to 400°F.
Scrub the potatoes clean and pierce them with a fork several times. Place them on a baking sheet.
Bake the potatoes in the preheated oven for about 45-60 minutes, or until they are fork-tender.
Allow the potatoes to cool for a bit, then cut them in half lengthwise. Scoop out the inside, leaving a thin layer of potato on the skin.
Brush the potato skins with olive oil, melted butter, and season with garlic powder, grated parmesan, salt and pepper.
Place the potato skins back on the baking sheet, skin side down, and bake for an additional 10 minutes or until the edges are golden and crispy.
Remove the potato skins from the oven, sprinkle shredded cheddar cheese and crumbled bacon on top.
Return the potato skins to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let them cool slightly.
Top with sour cream and green onions.
Serve your baked potato skins as a tasty appetizer or snack. Enjoy!
