I love to read, it really doesn’t matter what it is I’ll read just about anything but I really enjoy reading cookbooks. Old ones new ones, I just think it’s so interesting to find different recipes to try.
The other day I was reading through Valerie Bertinelli’s book Valerie’s Home Cooking: More than 100 Delicious Recipes to Share with Friends and Family and I saw this recipe for S’mores Popcorn. I mean who doesn’t love Valerie and S’mores and Popcorn so this has to be amazing, right?
S’mores Popcorn doesn’t disappoint, it’s crunchy, chewy, chocolatey and totally addictive – time for an extra Pilates class but I don’t care, it’s that good! In the book she talks about how it started out in the test kitchen with her trying to come up with a peanut butter and jelly popcorn and when that wasn’t working for her she decided to try S’mores Popcorn.
I’m not sure what I think of the idea of peanut butter and jelly popcorn but I could eat S’mores Popcorn all day long so I’m really happy she tried it and shared it in her cookbook. This recipe would go really good at a party, a family gathering, movie night or like me sitting at my desk and munching on it while I write this post.
My favorite line in the intro for this recipe is “And yes, this does save in an airtight container, but good luck with that.” True story, if you make S’mores Popcorn it doesn’t last very long!
What is S’mores Popcorn?
S’mores Popcorn is an addictive snack that combines two awesome treats – s’mores and popcorn. It brings together the crunchy delight of popcorn with the classic flavors of s’mores: sweet marshmallows, decadent chocolate, and crisp graham crackers. This fusion snack appeals to the taste buds of just about everyone, creating an irresistible blend of texture and flavor.
Ingredients
- Salted popcorn
- Miniature marshmallows
- Graham cracker
- Semisweet chocolate chips
- Granulated sugar
- Unsalted butter
- Light brown sugar
- Light corn syrup
- Kosher salt
- Baking soda
How to make S’mores Popcorn
Preheat the oven to 250°F. Line 2 large rimmed baking sheets with parchment paper or silicone baking mats.
Toss together the popcorn, marshmallows, graham crackers, and chocolate chips in a large bowl.
Combine the granulated sugar, butter, brown sugar, and corn syrup in a medium saucepan. Bring to a boil over medium – high, stirring until the butter melts and the ingredients are completely combined.
Continue to boil, without stirring, until a candy thermometer inserted in the mixture registers 245°F (firm ball stage), about 4 minutes.
Remove the sugar mixture from the heat, and stir in the salt and baking soda.
Gradually pour the sugar mixture over the popcorn mixture, stirring gently with a heatproof spatula until the popcorn is evenly coated.
Spread evenly onto the prepared baking sheets.
Bake until the sugar mixture is melted and evenly incorporated, about 20 minutes.
Stirring gently after 10 minutes.
Remove from the oven, and place in a cool, dry place until the chocolate is firm, about 1 hour.
