Last week I had some bananas that I needed to use up, and I wanted something a little different than Classic Banana Bread or even Blueberry Banana Bread.
I was definitely in the mood for something chocolate so when I found this recipe in the cookbook Cooking With Bananas: Breads, Cakes, Puddings & More! and Chocolate Banana Muffins really hit the spot.

Ingredients
- All purpose flour
- Baking powder
- Baking soda

How to make Chocolate Banana Muffins
Preheat the oven to 400°. Spray a 12 cup muffin tin with non stick cooking spray or line with paper liners.
In a mixing bowl, add the all purpose flour, baking powder, baking soda, salt, granulated sugar and cocoa powder. Stir until combined.
In a separate mixing bowl, add the bananas, eggs, vegetable oil, milk and vanilla extract.
Whisk until combined and add to the dry ingredients. Mix only until the batter is moistened and combined.
Spoon the batter into the muffin cups filling them about 2/3 full.
Bake for 15 minutes or until a toothpick inserted in the center of the muffins comes out clean.
Remove the muffins from the oven. Cool the muffins in the pan for 5 minutes.
Remove the muffins from the pan and serve warm or at room temperature.
