I really love blueberries, even as a small child they were my favorite thing to eat! I am always willing to try any recipe that has blueberries in it and this one for Blueberry Banana Bread is amazing.
This bread is so moist and delicious, I think I could eat this everyday for breakfast and be perfectly happy.
I found this recipe in the cookbook Superfoods at Every Meal and of course since it has blueberries in it I totally needed to make this! Don’t get me wrong, I love a good Classic Banana Bread but the addition of blueberries just makes it even better, in my opinion.

Ingredients
- All-purpose flour
- Baking powder
- Sea salt
- Coconut sugar
- Honey
- Pure vanilla extract
- Mashed bananas
- Eggs
- Greek yogurt
- Organic blueberries
How to make Blueberry Banana Bread
Preheat the oven to 375°F (190°C).
Spray a 9 x 5 x 3-inch (23 x 12.5 x 7.5-cm) loaf pan with nonstick spray.
Combine the flour, baking powder, salt, and sugar in a small mixing bowl. Stir thoroughly.
Combine the honey, vanilla, bananas, eggs, and Greek yogurt in a large mixing bowl. Stir thoroughly.
Then add in the dry mixture.
Stir to combine.
Fold in the blueberries.
Pour the batter into the prepared pan.
Bake for 60 minutes, or until golden brown and a skewer inserted into the center comes out clean.
Let cool in the pan before turning out onto a wire rack to cool completely.

- 1 tablespoon 14 g baking powder
- ½ teaspoon sea salt
- ½ cup 100 g coconut sugar
- ¼ cup 80 g honey
- 1 teaspoon pure vanilla extract
- 1 cup 225 g mashed bananas
- 2 eggs
- ¾ cup 172 g plain Greek yogurt
- 1 cup 155 g organic blueberries
