My first thought was, why would I want ruin a perfectly good cookie with butterscotch chips, but I was so wrong! These cookies are literally one of the best cookies I’ve ever had!
I still love regular Oatmeal Raisin cookies but these Oatmeal Raisin Butterscotch Cookies have such great flavor and texture and they’re just so delicious and soft and chewy, you just have to try them once and you’ll be hooked.

Ingredients
- Butter
- Brown Sugar
- Granulated Sugar
- Eggs
- Vanilla Extract
- All purpose flour
- Baking soda
- Cinnamon
- Salt
- Oatmeal
- Raisins
- Butterscotch chips
How to make Oatmeal Raisin Butterscotch Cookies
Preheat oven to 350°In the bowl of a stand mixer, combine butter and sugars until smooth and creamy.
Add eggs and vanilla extract and mix well.
In a medium bowl, combine flour, baking soda, cinnamon, and salt.
Add the flour mixture to the creamed ingredients, mix until blended.
Add oats and stir well by hand.
Add raisins and butterscotch chips, mix until blended.
Drop by round tablespoon onto an ungreased cookie sheet.
Bake for about 14 minutes or until lightly browned. Transfer cookies to a cooling rack.

- 1 cup butter softened
- 1 cup packed brown sugar
- 3 cups granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 3 cups dry oatmeal
- 1 cup raisins
