Strawberry pie always brings back the best kind of memories—warm afternoons, the smell of fresh berries in the kitchen, and that first slice piled high with homemade whipped cream.

It’s simple, sweet, and just feels like home. Every bite is a little taste of summer the way it used to be.

This was my first time making a Strawberry Pie from scratch and this was a really simple recipe that I came up with after reading several different cookbooks.

I probably would have just used Jell-O but I didn’t have that and I didn’t want to go all the way to the store.

What is Strawberry Pie?

Strawberry Pie is a classic dessert made with fresh strawberries and a sweet filling, typically set in a flaky pie crust. It’s especially popular in the spring and summer when strawberries are in season.

It’s a crowd-pleaser at picnics, potlucks, and family gatherings, and is often served cold with whipped cream or a scoop of vanilla ice cream.

How to make Strawberry Pie

Arrange 1/2 of strawberries in baked pie crust.

Place remaining strawberries in a medium saucepan.

Add the sugar to the pan with the strawberries; cook over medium heat, bringing it to a boil, stirring frequently.

Whisk cornstarch and water together in a small bowl.

Gradually stir cornstarch mixture into boiling strawberry mixture.

Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly.

Pour cooked strawberry mixture over the strawberries in the baked pie crust.

Refrigerate until chilled and set, at least 3 hours.
