Who doesn’t love potatoes? There’s so many ways to make them, the options are practically endless; baked, mashed, fried, au gratin – the list goes on and on. But Twice Baked Potatoes are the one side dish my whole family will eat so we make these quite often.
Twice Bakes Potatoes are like a comfort food at my house. One of the great things about this recipe is that you can make it ahead of time and pop them bake in the oven when you’re ready to eat. People are always impressed when I make these potatoes and they think I’ve gone to a lot of work but actually they’re very simple and easy to make!
What are twice baked potatoes?
Twice baked potatoes are simply a potato that has been baked once, then the insides are scooped out and mixed with the ingredients that make it creamy and tasty. Then scooped back into the potato skins to be baked a second time.
Ingredients
- Russet Potatoes
- Top the Tater Sour Cream
- Shredded Sharp Cheddar Cheese
- Bacon Bits
How to make twice baked potatoes
Preheat the oven to 375°F, wash potatoes and poke several holes in each with a fork.
Bake for an hour or until tender.
Remove from the oven and allow them to cool for 15 minutes.
Once cooled, cut each potato in half length-wise.
Scoop the insides of each potato into a large mixing bowl, leaving a small amount to help hold it’s shape.
Add in the sour cream, shredded cheese, and bacon bits (optional).
Mix together until creamy and smooth. Add salt and pepper to taste.
Spoon the mixture back into the potato skins.
Bake for another 20 minutes, top with more shredded cheese for the last 5 minutes.
Remove from the oven and serve hot.
