Instructions
Add butter, water, salt and pepper to a medium saucepan and melt the butter over medium heat.
Scrub the potatoes and cut into quarters.
Add the potatoes to the saucepan, cover and cook over low heat for 25 to 30 minutes, stirring occasionally.
Remove from heat, sprinkle with parsley and stir to combine.
Transfer to a serving bowl and serve immediately.
