How to make Banana Bread Granola
Preheat oven to 350° F.
In large bowl, combine the rolled oats, nuts, ground cinnamon, sugars, flaxseed and salt. Stir to evenly distribute the ingredients.
In a small saucepan over medium heat, warm the coconut oil, honey, and vanilla extract until it reaches a liquid consistency. Remove from heat and stir in banana puree until fully combined.
Pour the wet banana mixture over the dry oat mixture and stir until everything is well coated.
Spread the granola mixture evenly onto the prepared baking sheet.
Bake in the preheated oven for about 25 minutes or until the granola is golden brown, stirring it gently halfway through to ensure even baking and to break up clumps.
Remove the granola from the oven and let it cool completely on the baking sheet. It will become crispier as it cools.
Store the granola in an airtight container at room temperature. It should stay fresh for a couple of weeks.
