How to make Ham and Pickle Roll-ups
Pat the pickles dry with a paper towel to remove excess moisture.
This helps the cream cheese stick better and keeps the roll-ups from becoming soggy.
Place the softened cream cheese in a mixing bowl.
Using a hand mixer or stand mixer with a whisk attachment, beat the cream cheese on medium speed for 1-2 minutes, until smooth.
Lay two slices of ham flat and spread a thin layer of cream cheese evenly over the surface.
Place a pickle at one end of each slice of ham.
Roll the ham tightly around the pickle, starting from the end with the pickle and rolling to the opposite side.
