Stored in your refrigerator and ready to bake on a moment’s notice, Icebox Cookies are the perfect treat when you crave something sweet but don’t have time to invest in a full-scale baking project.

What are Icebox Cookies?
Icebox cookies are cookies that are typically made by taking cookie dough, shaping it into a log, and slicing it before baking. This method of making cookies allows you to make a large batch of cookie dough and bake what you need, when you need it.
Ingredients
- Granulated sugar
- Brown sugar, firmly packed
- Butter
- Shortening
- Eggs
- Flour
- Baking soda
- Ground cinnamon
- Chopped walnuts
How to make Icebox Cookies
Preheat the oven to 350°.Add the brown sugar and granulated sugar to the bowl of a stand mixer.
In a small saucepan, melt butter and shortening over low heat and then pour over the sugars. Mix on low until well combined.
Add in the eggs one at a time followed by the vanilla extract.
Add in the baking soda and cinnamon and mix well.
Add in the flour and mix until combined.
Mix in the chopped walnuts.
Divide the dough in half and place on parchment paper. Shape each half into a log about about 2 inches tall and 3 inches wide.
Place dough in the refrigerator for at least 4 hours to chill.After the dough has chilled, remove the parchment paper and slice the cookies 1/8 to 1/4 inch thick.Place on a baking sheet and bake at 350° degrees for 10 – 12 minutes.
Cool cookies on a wire rack.
Serve with a nice, cold glass of milk.
